Another Casserole....
Have you realized I cook alot of chicken?? It's like a staple in my house. When in doubt, we fix chicken. Now that I have a grill, it's also opened up a whole batch of new recipes. I blame it all on Pinterest.. However, I think it is a good thing.
I came across this Casserole recipe on Pinterest via www.organizeyourstuffnow.com. The recipe is for Chicken Cordon Bleu Casserole. It has all my favorite things, low ingredients and easy!!! Click here or on the recipe to get more pictures and see how hers turned out. With it being just me and Mac, I would for sure have leftovers!!!
Directions:
Coat 9x13 inch baking dish with cooking spray.
Spread 2 cups of COOKED rice in bottom of baking dish.
Arrange 3 cups COOKED chicken pieces over the rice.
Layer 6 slices of Swiss cheese on top of the chicken.
Then layer 10 slices of cup-up ham on top of the Swiss cheese.
Mix 2 can Cream of Chicken soup, 1/2 cup milk, and 1/2 cup sour cream together.
Spread on top of ham.
Crush 10 saltine crackers then add 1/2 teaspoon paprika, 1/4 teaspoon garlic salt, and 1/2 teaspoon parsley.
Sprinkle on top of soup mixture.
Bake at 350 degrees for 30 minutes....
Enjoy!!!

Holiday Baking....
Found another one!! God Bless Pinterest. If I had the time to cook or make all that I have pinned---I would need another house and a much bigger kitchen!! That is why I try so hard to find the "simple" recipe's. Low ingredients and easy to do. Today's find is another for the holidays. It over on plainchicken.com.. Haven't made it yet... But it's on the agenda!!!
Ingredients:
3-4 cups cooked kitchen (rotisserie can be used)
2 cups chicken broth
1/4 cup unsalted butter
1 cup flour
1 1/4 tsp baking powder
1/4 tsp salt
1 cup milk
1 can Campbell's cream of chicken soup
Preheat oven to 400 degrees.
Melt butter in the microwave and pour into bottom of 9x13 pan.
Shred the chicken and spread it on the top of the butter.
Whisk together the milk, flour, baking powder and salt. Slowly pour over the chicken. Don't stir!!
Whisk together chicken broth and cream of chicken soup. Pour soup over the flour and milk mixture--again don't stir.
Bake uncovered for 35 to 45 minutes or until dumplings are golden brown.
Sounds easy enough!!!

Blanket for Mya
In an effort to protect my couches from our new puppy, Mya, I made her a knotted throw. They are leather couches, but still!! I'm terrified she will mess them up. I'm going to try and train her not to get on the furniture at all. I know what you are thinking---"good luck with that!!" Please say a prayer for patience for me!
Here is the blanket. they are so easy to do. It took me about two and half hours to do. I loved the pattern.

Mya Comes Home...
We are so excited to announce the arrival of our new baby girl Mya. Mac has wanted a Siberian Husky for as long as I can remember. So for his 16th birthday---I got him Mya. We are picking her us from Wedowee Alabama--where ever that is, today... So ya'll can look forward to seeing lots of pictures from this new venture!!!

Designer Bedding...
I can finally say that my downstairs with its new tile and bathroom looks awesome! Mac is going to be so happy in his "man cave"!! And I'm so happy to have my office/craft room back!! I have found several great finds on Pinterest and I'm so ready to start on them...
One of these awesome finds is this pet bed. Now I have made several knotted blankets. Love doing them. But never have I thought to do one as a pet bed!!! Genius!! So our new baby girl Mya is about to get her very own Roll Tide knotted bed!

Christmas Crafts.....
It's getting closer... I think one of my Facebook friends posted the other day, only 14 weeks until Christmas. Can you believe that.. As of today, 95 days until Christmas.. And with the find of Pinterest this year--I have craft ideas for days!!!
One really cute find is with clear ornament balls and acrylic paint. All you do is drop the colors you want to use into the top of the ornament. Then shake it or let it sit and drain to the desired effect you want. How simple is that!! Hobby Lobby and Home Accents already have Christmas stuff out so I'm sure you can find all you need as far as ornaments. Then Walmart for the paint. See SIMPLE!!!

Love me some Pineapple....
I think I'm going through a pineapple phase right now. Can't seem to get enough of it. My favorites right now are pineapple, honey dew melon and blackberries. All mixed together. Crazy I know, but very good!!!
I found this recipe on Pinterest.. Its called Bakes Pineapple Casserole. Looks simple enough...
Ingredients:
1/2 cup butter
1 cup white sugar
4 eggs
1 pinch ground cinnamon (optional)
1 pinch ground nutmeg (optional)
5 slices white bread, torn
1 (20 oz) can crushed pineapple with juice
Preheat oven to 350 degress. Grease a medium-sized casserole dish. In a mixing bowl, cream together butter and sugar, beat in eggs one at a time. Stir in cinnamon and nutmeg. Add bread and crushed pineapple into the mixture. Transfer mixture to the prepared baking dish.
Bake in oven until bubbly and lightly browned, about 60 minutes.

Fall Casserole's...
Let me first say, I will never ever be able to make chicken and dressing as good as my moms. Her's is the VERY BEST ON THE PLANET!! However, thanks to Pinterest, I can atleast "attempt" some simple ones that I come across.
I found this via Pinterest on a blog called Southern With a Twist. She looks like she makes some real southern dirty nasty food!! This one that I came across is called Chicken N Dressin Casserole.. It looks simple enough...
Ingredients
4 chicken breasts cooked and cubed
1 pan prepared cornbread, cooled and crumbled
4 eggs, boiled, chopped
1 small onion, chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
2 cups chicken broth
1 can condensed cream of mushroom soup
Combine all ingredients and place in a 13x9 baking dish. Bake at 350 for about 30-45 minutes or until set.
Can it get any more simple than this!!

A Weekend Casserole.
Have I told you this week how much I love Pinterest. It just takes you to the best blogs and recipe's ever! And then if you go back into that blogger's history----you find even more recipe's!! Just awesome.
I have had several friends say Shrimp and Grits are to die for. So when I came across what looks to be a simple recipe, I though why not. I found this over at The Kitchen is My Playground.. I think I may try it on my next weekend off...
Shrimp and Grits Casserole
Ingredients:
2 c milk (whole or skim)
3/4 cup chicken broth
1 cup quick cooking grits
1/4 tsp. salt
1/2 c shredded Parmesan cheese
2 T butter
4 oz. cream cheese
1 or 2 T chopped fresh chives
3 T fresh parsley or 1 T dried parsley
1 T. lemon juice
1 egg
1 lb. peeled shrimp roughly chopped
Directions:
Bring milk and chicken broth to a boil in a medium saucepan over medium high heat. Gradually add grits and salt to pan, stirring constantly with a whisk. Cook 5 minutes or until thick, stirring constantly. Remove grits from heat. Stir in Parmesan, butter, and cream cheese until melted; then stir in remaining indredients.
Spoon grits mixture into a 11x7 baking dish generously coated with cooking spray. Bake at 375 degrees for 25 minutes or until set and the top is just starting to get some golden brown areas.

Another Good Find...
Well I'm still over at Kids In The Sink blog and came across a recipe for Baked Spaghetti. I have never fixed it but have always wanted too!! Looks like it would make good leftovers. Now she made her own sauce from scratch---Tara doesn't have the time to do that, so I will use a store brand of some sort. I'm all about simplicity!!
Baked Spaghetti
Ingredients:
1-1 1/2 cups of your favorite spaghetti sauce
2 cups cheese, divided (you can mix it up with Mozzarella and cheddar)
1 package of spaghetti noodle
Directions:
Cook noodles according to package instructions, stopping a minute or two before al dente.
Drain the noodles and mix with the spaghetti sauce and a cup of the cheese.
Place into a 9x13 baking dish and top with the remaining cup of cheese.
Bake for 20 minutes or until cheese is golden and bubbly....
Enjoy!!!

A New Mexican Dish...
As most all of you know, I love my spicy foods. Hotter the better. I also love easy recipe's. I came across this one on Pinterest via Kids In The Sink blog. She has some really good looking recipe's that look relatively easy.. Here you go...
Mexican Sweet Potato Casserole
Ingredients:
3 medium sweet potatoes
1 can corn, rinsed and patted dry
Mexican seasoning (cumin, paprika, garlic powder)
1 can black beans, rinsed and drained
4 canned chipotle peppers in adobe sauce, minced
1 oz cream cheese
1/4 cup Greek yogurt
1 teaspoon salt
1/2 cup cilantro, roughly chopped
1 cup shredded cheese...
Directions:
Preheat oven to 350 degrees and bake potatoes for about an hour. While potatoes are baking, place corn in a heavy skillet over medium high heat with no butter or oil. Sprinkle with salt and Mexican seasoning and do not stir. Let the corn roast for 3-4 minutes before stirring. Stir and then let sit for another few minutes before stirring again. Continue for another 10 minutes until corn is brown and roasted. Set aside and mix in medium bowl with black beans.
Remove sweet potatoes from oven once they are fork tender. Let them cool enough to touch then cut in half and scrape the flesh of the sweet potato out and into the bowl.
Mix the flesh with cream cheese, chipotle peppers, Greek yogurt and salt. With a potato masher, mix until well combined. Once thoroughly combined, stir in black beans corn and cilantro.
Place mixture into a large casserole dish and cover with cheese. Bake for 20 minutes or until cheese is melted and starting to bubble.

Game Day!!!
So excited that I was able to get tickets from a co-worker---Thank you again Christy Meadows!!!!! Mac and my brother are headed to Tuscaloosa to see the Tide game... Happy Early Birthday Mac!!!

Busy Week....
Hello friends... So sorry I haven't checked in this week. It's been crazy. My house is still a "construction site" but the tile should be finished and grouted today. I hate that I had to work through the entire process, cause my tile guy was a cutie!! His name was Fabio.. I always get the "butt crack work pants" kinda of worker!! So it was a nice change to have a cutie!! Thanks goodness I had gotten up and gotten ready!! But in the end, Fabio was married and I only got to see him work Tuesday cause I had to return back to work.. So farewell to Fabio after today----such a vision in his Nissan Titan truck!!!
