Very Cool Salad...

I'm still looking through The Kitchen Life of a Navy Wife----she has a bunch of very tasty recipes!!!  I love love love cold salads in the summer time and was so glad to find an Ambrosia Salad on her site.   I think this one will do year round though...


Ambrosia Salad

Ingredients

1 can mandarin oranges, drained (11 oz)
1 can crushed pineapple, drained (8 oz)
2 cups sweetened shredded coconut
2 cups miniature marshmallows 
1 tub cool whip (8 oz)

Using a rubber spatula, gently fold together all ingredients in a large serving bowl and refrigerate until ready to serve.

Real Man Casserole!!!

Hey friends...  I've been so busy I haven't had time to blog in a few days..  Getting the downstairs finished for Mac to move his room down there and working..  He is getting more excited about it.  He won't admit it, but I think he likes being upstairs close to his mom!!  I'll post pictures when it's all said and done and the transformation is complete...
I did come across a very "manly" casserole today on Pinterest and had to repost it.  I found it on a very cool blog called The Kitchen Life of a Navy Wife and its called a John Wayne Casserole.  It looks so simple and has "normal" ingredients----which I love.


John Wayne Casserole

Ingredients

2 pounds ground beef, cooked and drained (I will use ground turkey)
1 packet taco seasoning
4 oz. sour cream
4 oz. mayonnaise
8 oz cheddar cheese
1 yellow onion sliced
2 cups biscuit mix
2 tomatoes sliced
1 green bell pepper sliced
1 (4 oz) can sliced jalapeno peppers

Heat oven to 325 degrees. Brown your meat and add taco seasonings and water according to packet instructions; set aside.
In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, and half the onions; set aside.
Stir biscuit mix and water (directions on box) to form soft dough.  Pat dough on the bottom and one half inch up the sides of an 9x13 inch greased casserole dish.
Saute remaining onions and bell peppers until slightly tender.
On the top of biscuit mix evenly distribute ingredients in the following order:  your meat, tomato slices, green peppers, onions, jalapeno peppers, sour cream mixture and end with remaining shredded cheese.
Bake for 30-40 minutes or intil edges of dough are lightly brown.

Love a Cold Salad....

I love a cold salad.  I could eat it just about every day.  I really started liking cucumber's over the past two years.  They are so good when you dip them in greek yogurt mixed in with a Ranch Seasoning packet.  My favorite snack right now.
I did find this very tasty recipe for Cucumber Salad over on Pinterest via Seasoned With Love blog.  I'm going to fix it this weekend as a side dish...

New Favorite Things....

I love finding new cereals that are healthy, yet tasty too..  It was also nice when I got to my local grocery store, Publix, and it was buy one get one free!!  I had a cup at work this morning without milk and it was really good.  It's going to be great with my Almond Milk I've also gotten addicted too!



My other new Favorite Thing is International Delight: Iced Coffee in Mocha.  I love this.  I haven't had a full cup of it, but I did put about two ounces in my protein shake this morning and it gave it a tiny, little coffee kick.  My protein mix is chocolate already so I think I need to get vanilla for it to really be good.  I put so much in my protein shake already---blueberries, half a banana, 1/2 teaspoon peanut butter, 1 tablespoon raw oats and one scoop of whey protein.   It is the BOMB!!  I'm even sad when I finish it because it is so good!!!

Another Cleaning Tip....

I'm alittle under the weather so this is going to be a short post....  I have really fallen in love with my blender...  I've been putting together some great protein smoothies.. So good....  But clean up is always tedious...   With the downtime I have, I found this great "blender clean up" tip in my Women's Day magazine and have to share it...

Fill the blender with one quarter full warm water, add 1/4 tsp. of liquid dish soap and 4 ice cubes.  Turn blender on high for one minute.  The ice will clean the blades and force the soapy water into all those hard to reach spots...
See, much easier than trying to shove a dish rag or a cleaning pad down there!!!

New Cleaning Goals....

I think I have come up with an idea for tackling my big cleaning projects.  I've been stressing over getting them all done----when I should be looking at it ONE at a time.  I do this to myself all the time.  I look at the BIG PICTURE and think, "I will never get this done by myself."  I just have to stop doing that!!  The "Big Picture" tends to freak everybody out, I think.. I hope I'm not alone in this---LOL!!!

So, this weeks cleaning challenge is my lower cabinets that contain the countless cooking items that I DO NOT use..  Out they must go!!  I have a few new ones that I'm wanting to buy and simply don't have room for them until I clean out what I have.... I'll let you know by Friday how it's looking....

Three Miles even on a Rainy Day!!!

Do you skip your workout if it's raining?  I used too.  And then the guilt would set in when I looked at my DVD case that houses all my exercise DVD's.  There was no excuse.  It wasn't raining IN my house!  So I pulled out one of my favorites, and I have been feeling great ever since!!  I love my Walk at Home DVD's by Leslie Sansone.  They are so much fun and provide you with a sweat dripping workout---all while moving around your living room!!  She has four basic core moves that she works from and then she also does 1-2 minute "boost" that really intensifies the workout.  Just so much fun.  If you are pushed for time, she also gives you the option to do one, two, or three miles.  Then after the cool down, she does some great toning and abdominal work on the floor.
 I'm not one for the whole gym membership thing so I have always loved my DVD's.  Walmart also sells several of Leslie's DVD's...  If you are looking for a good one----these are it!!!

Cooking Review--- Zucchini Tots, Honey Garlic Pork Chops

This past weekend I cooked two of my "recipe's to do" from Pinterest.  The first one, Zucchini Tots, I fixed as a side to the Honey Garlic Pork Chops.  The zucchini tots were AMAZING!!  Very good and so easy to do.  Now I did tweak the recipe a little.  I added about a tablespoon more bread crumbs and I used one regular egg and maybe a tablespoon of my egg beaters.  This helped hold it all together a little better.  the recipe also called for a mini muffin pan.  I just used a six count regular muffin pan and made them a little larger.  I liked that size.  Over all, I will for sure make them again--simple and very tasty!!   Check out the blog Emily Bites for alot more recipe's!!!


For the meat portion of Sunday's dinner, I fixed the Honey Garlic Pork Chops via Pinterest from Spark Recipes.  There again, very easy recipe.  The only thing I think would have made them better, was if I would have been able to grill them.  I baked mine since my grill is out of commission.  They turned out, "all right"...  I'm not sure I would fix them again unless I could do it on the grill.  However, for simplicity the recipe is worth trying, as long as you can grill them!!!
